Abstract

Despite the importance of the restaurant sector, present in all 5570 Brazilian municipalities, there are recurrent problems. The main difficulties are food waste, food safety, lack of skilled labor, high energy consumption, inventory management,
and equipment control and monitoring. Using technologies for process automation, data collection, and decision-making support can enable the development and management of these establishments. In this work, the objective is to map solutions that use the Internet of Things in the area of restaurants. For this, the research method used was the systematic
literature review. The results show that the hospitality sector is essential to the countries’ economy but still needs
help managing relevant issues such as waste and food safety. For these and other needs, the application of evolving
technologies, such as the Internet of Things, can become a valuable tool for the development of restaurants.
